I put in a 9lb pork butt on my cajun injector electric smoker today at 4:30pm and set it to 225. I am working all night and have my wife adding chips and spraying it every 2hrs until she goes to bed. I am at work until 6am and we are running the smoker all night so that way I hope the butt will be ready for the big game tomorrow. Just worried i will over cook it letting it go for 14hrs. Any thoughts would be appreciated
