Since I am off this week I plan to smoke some whole chickens and maybe some other stuff. Any hints on how I should do it?

I would suggest using a smoker

Brine it for a bit then give it the high (300 +) heat smoke...........and don't over cook it.

Also, go light on the wood, chicken absorbs the smoke like a sponge.
