Thighs in a down pour

Had 6 Chicken Thighs brined over night rubbed and ready for the mini.Thunder storm arrived early,had the bird parts in at 250*, vents part open knowing temp would come up.


In the mini


10 minutes later


30 minutes later


had a break about 1hr plus into the smoke ran out and they were done.


Checked with my therma pen 180+ so crispy and moist.
