Thermometer Recommendation for 36” Sq Hot Smokehouse

Looking for recommendation for my Hot Smokehouse build with dimensions 36” x 36” x 8’. Thinking of mounting a quality digital with possible WiFi capabilities onto the outside of the house with probes that can read temp inside smokehouse as well as a probe that can read the internal temp of meat I am cooking/smoking. Money is not an issue as I will by once and buy right. Just need recommendations/advice from some of you put bosses. Also, I may line the inside with some type of insulated layer that not only prevents fires but will help keep temps inside smokehouse uniform and would welcome suggestions on materials (insulated sheets, rolls, panels, foil lining, etc) as well. Thanks in advance!

Nice looking build like that deserves a good thermometer. Check out
Thermoworks. They have some of the best stuff IMHO. I have their "Smoke" wireless thermometer. It has worked flawlessly for the past 6 years now, and I'm still using the original probes. It did not like getting wet during one cook. I took it apart and dried it, reassembled.

I did try their WiFi gateway for the smoke, but could not get it to work reliably. I had to fuss with the settings every time, something I dont need to be doing when there are more important tasks. Don't recommend that device.
They use some really good radios for the remotes, I use mine over my 3 acre property.
Take a look they have a number of WiFi and some professional type data loggers.

Your recommendation for Thermoworks was indeed helpful. I read the reviews and seems like a reliable user-friendly product. I bought the Thermoworks Signals, and bought the Billows along with a few addition Pro Series Probes and extension cords.

I have no idea how to work it or install it but I guess there are videos and an instruction manual so I shall figure it out. I also built a Cold Smokehouse that is bigger and both will be completed in the next 2 weeks! Not sure if I need a fancy thermometer for that or just the simple door probe thermometers since I will be keeping the chamber mostly below 100 degrees and prolly oftentimes between 50 and 80 degrees. I could probably use the Thermoworks Signals on that as well by just creating a harness or bracket for the unit.

I’ll give you heads up on the Signals unit. The first time you get it powered and logged on your wi-do it will go into update mode that makes it appear DOA. I think mine went 4-5 hours before the update completed and the unit responded
The phone app is really good
Unless you plan to run both smokers you can use the same base unit and get extra probes to leave in each smoker

I will be burning apple wood or cherry wood for heat and smoke. My brother is getting me a tote of each so I am set for a while. I will make chips for the cold smoker, build a small fire, then just let chips smolder so there won’t be much heat.

I appreciate the suggestions in setting the Signals up. I will do a couple burns in each to cure the smokehouses, so the will be good for me to learn the Signals unit. And I did buy extra probes so will use the Signsls with both the hot and cold smokehouses and just leave the probes in each.
 
If you find the signals and billows is struggling to hold temperature (either overshooting target badly or not getting up to target temp), get the damper for the billows. The fan moves a huge volume of air and unless your smoker is huge, it can't cut off fast enough to prevent overshooting. The damper is just a couple of $; probably ought to be included with the billows.

Thanks for the suggestion and tips! I went ahead and just ordered it. My Thermoworks signals and billows arrived in the mail today so I have pretty much everything I need now except for the damper which will probably be here by Tuesday. 👍
