Hey all.....I have a MES smoker and just bought a meat thermometer. Where do you all run the probes ? Just close the door on them ?

As Jim said, run them through the exhaust.
Never been a fan of closing the door on probe cables.

I just do the door, have had 6 sticking out before. Gasket still seals it tight. I have about a 24" stack on my vent so that is out for me.

Hi, I have a MES 30. Over the years I have ran the probe wires through the top vent as well as the door.
In my opinion It does not matter. What matters is where you put them once inside the heat chamber. Last spring I put some probe ports in the side of the box. This was done with 1/2 inch brass lamp parts. The probes I use are straight.
