So I watched The Great Outdoors with my father recently, and in honor of the late John Candy decided to buy a huge slab of meat to do something with.

I decided to make a massive "Man Food" Steak sandwich. I decided to combine the smoke flavor with a little science and first cooked the meat at 126 degrees Sous vide for 2 and a half hours. I wanted to make the meat as tender as possible, since it was a fairly cheap cut of beef.


After 2 and half hours , I lit up the egg with heavy, heavy heavy amounts of smoke...did not want to over cook the meat but wanted to get as much grill flavor as possible.

Got some Crusty Bread , topped it with the shaved steak, crisp bacon and chimichurri sauce. Oh an a hard boiled egg...cuz come on eggs are good. Didn't eat as much as the legend John Candy...but I was satisfied! Then fell asleep...cheers!
 
Looks good. What cut is that big ole hunk o meat?
 
To be honest I don't remember, I wanna say London broil or a Top Round of some sort....I was looking more for "size" than "Quality" with this experiment...to be honest the cut didn't look that great, however it came out well, was pleasantly surprised.
