And it helped me understand why I get better wood flavor by burying my chunks of wood in the bottom of the cold charcoal in my WSM.
The bags of wood purchased at Walmart, HD, and Lowes are kiln dried. Plus, they dry further because they may sit in my garage for a year or more depending how many bags I buy on sale. I had the preheat part right. And they carbonize slower due to lower temp and airflow. Thanks for posting a link that further completes my understanding.
