I've stumbled across this forum now many times and it's proven useful so I thought I'd join. My name is Jason, 25 & from Philadelphia. I love to grill & smoke meats!

After grilling on gas since i was 13, I made the discovery of charcoal grilling about 3 years ago. I've always had a fascination of smoked meats and have been learning ever since. I currently own a Weber 22.5" kettle and in the process of looking for an actual smoker. So far, my experience is limited to ribs and pork shoulder, and brisket but with the purchase of a new rig, I certainly hope to expand that.

curious about the name - koshersmoker263? well I'm clearly not kosher if i'm doing the pork thing. I'm just jewish but that doesnt stop me from enjoying my pork!

Well, I'm now off to go shred a hunk of meat that's been resting for 2 hours now.
