Found this recipe online.....unfortunately the meat cutters litterly butchered this loin roast so I couldn't "stuff" it. Not to be deterred, I slathered the loin in Roasted Rasberry Chipolte sauce, then covered the loin in apricots and smoked cashews...then wrapped in bacon. Smoked at 275 to IT 145. It came out great...very tastey and juicy...AND...with daylight saving got to eat outside for the first time this year....Yay...bring on spring!
