No problem Disco.  Only 2hrs in and it has felt like 10+.  The only thing I hate about smoking is the wait, but it is worth it.

The wait KILLS!! Oh my, I'm starved now and the only thing I have a taste for is something, ANYTHING smoked!!!

     I am starving!  The one I wrapped is ready very very soon, the other...well it has a little ways to go.  I need a maverick t372, because I know it is taking longer since I keep opening the door to check the chamber temp.  (outside therm is junk and reads WAY off)

My temp gauge on my unit is way off, too by about 50 degrees (it reads lower than actual)

First off I apologize for now Q-view on the first whole butt.  I got a little hungry and tore it apart before I got a picture.  I got really nervous when I started tearing it apart and it was harder than I thought it would be.  Once I tried it though I knew I was ok.  The rub had a nice flavor too it with just a little heat.  The bark was soft like I figured it would be from wrapping it.  It was very easy to chew and had a good amount of moisture to it.  Not too tough, and not mushy at all.  I made a sandwhich with a little bit of my sauce on top, but liked eating just the pork itself without any sauce better. (which is a great thing in my book)  Over I am really happy with my first butt.

Now for the 2nd butt.  This one I did not wrap to see how it would turn out.  It is still around 170ish.  I am really thinking about wrapping it just to finish it off.  I can not believe by wrapping they were about 30 degrees off when I pulled the first one.  I am trying to wait patiently, but I do not know how much longer I can hold out.

It is climbing finally.  I will say one thing it still looks juicy.

Finally pulled the last one and let it rest a bit.  Half of it was amazing, the other half was a little tight yet.  Not real sure how that happened.  The bark was not much different from the wrapped one.  I think I liked the wrapped one a little better than the unwrapped.

I've been watching your thread since you started. Very nicely done. In the long run wrapping or not wrapping is a person preference, what you like best and what works for you. Enjoy, you've got a lot of great meals there. Be watching to see what you try next. JB

Did you read the other rule? The one where you have to ship tastes out to every that post on your post? You know, cuz now I want some! I usually smoke all weekend, but I'm headed a couple hours south to get my new new-to-me car!!! Maybe Sunday ;) but just in case, you should share ;p
