Try soaking the shrimp in a cup of buttermilk with a tablespoon of Cajun Seasoning mixed in before battering and frying them. You could go up to six hours on the marinade. Just remember to mix the seasoning and buttermilk well as a few of the ingredients are hydrophobic and don't like to mix well.
