I have had the new pit for a few weeks now and have gotten a few cooks on her. Nothing to major but i am liking the results.

Cook one was an attempt at the chick roast burnt ends. Not very successful i did not give them enough time on the pit before moving them to braise and then that was rushed as it was getting later then i would of liked, and with starving kids and a wife i pulled them off. Next was just grilled chicken breasts for BBQ bacon and cheese chicken sandwiches. and those were spot on. Next came a smoked Sockeye Salmon fillet. It was a tiny bit over cooked but not by much. And it was really tasty. I usually cook these on my kettle, so this was a little different. and then tonight it was Tri-tip and it was spot on. So there is some learning to do but it is going to be real fun learning.

Nice looking cooks! Looks like you have been enjoying your new smoke fire!

All looks good . They are fun to cook on , and make fantastic food . One thing I had to get used to was the convection effect of the fan running .
I use a broiler pan from the house oven in mine . It fits under the lower grate . I will use water in it some times .

P. S. Slice your Tri-Tip across the grain .
