Thawed wrong meat

I took what I thought was a pork butt out off freezer last Sunday to thaw. Got Pops brine made yesterday and put in fridge over night to get cold. Was planning Ham for next weekend. Well its a huge brisket point. Oh well. Guess I smoking brisket this weekend. Recently did corned beef so dont want it again. Save brine for next week and try again. I was so looking forward to ham. Last one was so good.
 
I injected the heck out of last one and smoked next week. Was very happy.

So this ended up being the best brisket I can remember making. Something things happen for a reason. No pic which is not like me. I was invited to dinner that night but need cook brisket. Smoked 6 hours in WSM at 250. Put on rack in foil pan and covered. Into electric smoker at 275 for 4 hours until hit 203. Time to go so turned smoker off open door for few minutes and closed. Just left it there until got home. Never opened it and put in fridge. Grease got stuck in the rack. Fun to clean. Sliced it up on a bias next day and made spicy gravy. Very tasty and just melted in your mouth. I have the butt in the brine now. Ham next week!
