We all love it when a plan comes together, don't we? As many of us know, sometimes our family aren't the best measure of how good our food is. I've been told before how good my pulled pork was, but today in my own opinion I knocked it out of the park. Typical rub down the night before on a 7.5 pound bone in pork butt. Threw it on at around 8:15 this morning with a mix of hickory and apple. Used a new rub I found at Wal-Mart. I looked at the ingredients and figured why not. It is great. I fully plan on buying more of it. Plan was to cook it all the way through with no foiling but was getting short on time so ended up wrapping at around 180°. Pulled around 4 and sat for almost two hours. The taste and tenderness was amazing. Had a friend make some homemade BBQ sauce that I was going to mix in with the pork, but it didn't need it. We can be our own worst critics, today though I am complimenting myself.
