New to the website. Smoking from Hawaii. I usually smoke wild pig in a homemade smoker I built but lately have been trying my hand at sausage and just ordered a Masterbuilt electric smoker for a little more control. Any links or sticky's I should know about? Thanks.

Some sausage, teriyaki smoked wild pig, some smoked salmon.
Living in Hawaii and hunting a lot the local favorite is the “smoke meat”. It’s strips of pig marinated in a Teri style marinaded for a few days then smoke partially. Then freeze and when you’re ready to eat defrost and cut into small bite size pieces and fry in a little oil to finish cooking. It’s good. Oh it’s the second picture. Aloha.

Welcome to the board! Plenty of people here to give help and advice, try using the Search to look up any subject you're wondering about, like the model of smoker you're getting.

Many of our Southern members work with wild pig, they'll probably have some ideas for you.
 
Welcome. Ever since I got to Hawaii I fell in love with that Teri style marinade. I’ve only had it in chicken and steak though ill have to try it on pork. It makes for great kabobs
