Im real new to smokin. I just got my MES 30 a little over a month ago ad tryig to learn all i can. The wife says i put to much smoke on the foods and each time its getting better. I just have to learn how long to put smoke to the food.
 
It's a learning process to be sure... I just figure I'll learn something new every time I smoke.

It takes a little time, you'll get there. Some people like more smoke than others, so my only input is to smoke it to the wife's liking.

The taste for Smoke develops over time. Early on 1 hour on ribs or Chicken was all they family liked. 20 years later, if there is meat in the smoker...The smoke is flowing. The Pit Master Choice pellets, a blend of hickory, maple and cherry is the current favorite...JJ
 
Might be the quality of the smoke .
 
What kind of chips or pellets do you use, some are stronger than others, like mesquite I find that overpowering, I like hickory ,or any fruit, if I use my barrel smoker I normally use maple which is what I have readily available .

I used to get Too strong Smoke flavor from my MES, when I used the built in chip burner, because it's hard to control the Smoke (Too Much or Too Little), but since I got my AMNPS (8 years ago) it's been easy to get Perfect Smoke Every Time.

Thanks for the warm smokey welcome. the first time i smoked i was using mesquite ad hickory. Was good but to smokey. I added chips almost the whole time. (Bad mistake)
 
I did the same thing the first time I smoked, that's one of the first things I learned on smf, when it comes to smoke more is not always better.
