I'm president of a recreation club, today was our opening day. We have a few pools on a large private lot. We hang out and drink cold beverages while we stay cool in the water and tend the grill. Pretty chill but this time of year it's all about getting things ready. We worked our buts off painting etc. I didn't really feel like coming home and firing up the grill but it turned out pretty easy. I also started to marinade the chicken yesterday so my hand was kinda forced. Nothing like motivation!
Peanut butter, coconut milk, ginger, garlic, curry, and soy sauce plus a few more items made up the marinade.
The Bok choy came from our garden, it's that time of year when we have lots and need to eat a lot of it.
350°f 35 minutes indirect in the Primo. Pulled at ~180°f. Fantastic color in these thighs. Served with the Bok choy and jasmine rice.
