Howdy!

Lonely Texan living in New Mexico missing the Lone Star state and smoked brisket.

Have two 18.5 Weber Smokey Mountains, one with a BBQ Guru DigiQ and a Silver Bullet smoking jacket (for brisket and port butt), the other WSM has the new Nano Q (for ribs and chicken).

Just picked up a Northern Tool meat grinder on eBay for a steal and looking to get into sausage making (OK, missing Texas Hot Guts too).  Anybody have a good recipe for Texas Hot Guts, please let me know.  Ground my first hamburger and made the best green chile cheeseburgers (green chile, the best thing about New Mexico) I ever ate!  Never going back to store bought ground beef again!

Looking forward to reading and learning!

Greetings and welcome to the Group. Living in N.Mex. myself a while I fell in love with their flavors, Posole , Menudo , all the Caldos and Fry Bread. The culture there is Rich in flavors. Gather all you can and enjoy...especially the N.M. Chiles.

Have fun and...
