Dry ring will Equalize in fridge for a few weeks…. Soft in the center I thought I stuffed it really tight but apparently not tight enough …. Flavor sto. MoWas pretty good tho @37% weight loss…. I’d like to try 40%+ the rest of the salami I’m just waiting till I reach 40% will

Looks great to me . I've only done Umai , but I like it at 40 % .
Those slices look like they're right there .

Agree about the fridge to even out the moisture...but I am no expert. Salami is still on my to-do list.

I have tried a couple of times, one was successful and one was "hollowed out" with something growing in the center that looked like a breeding ground for legionnaire's disease or some other dreadful disease.
