I am from TN, just trying to get into smoking a bit. Small things like pulled pork ribs and some chicken wings would prob be the extent of it. I ordered a big Chief smoker. I am aware that it is designed as a cold smoker and not to cook. Seen some had picked up a 1000w hot plate and modified the bc. I prob will eventually. Amy tips or ideas to a new smoker would be appreciated.

Good afternoon and welcome to the forum, from a chilly and rainy day here in East Texas, and the best site on the web. Lots of              great people with tons of information on just about  everything.
