First smoke with the MES 30, using the Ivation dual probes, temp difference is a consistant 40 degrees. Any thoughts??

Only thought is that for a masterbuilt 30 be thankful its only 40 degrees off. Their controllers and temp sensors leave a lot to be desired.

My MES is about 25 off.

So I say its normal.

Get a Mav and adjust smoker temp to the Mav.

Mine is off 20 - 30 degrees depending on the temp it's set at.

So what I am getting from these responses is to adjust the temp lower on the smoker and believe the wireless thermometer. Will try this tomorrow on some ribs.

NASCAR-have you done the ice water and/or boiling water test with your Ivation thermometer. If it's calibrated right, it should read 32° with the ice water test and 212° on the boiling water test (or there about depending on you elevation). Stock themometers can be way off unless it comes equiped with a high end thermo that can be calibrated.

Wife did a boil test, her meat probe was 212, the ivation was 218. Did a cold test, they are still 6 degrees off. Also ran smoker this morning, set it at 200, the ivation was at 225. Now that I know the diffences, I can get back to smoking. Thanks
