Temps for smoked thighs?

Just rubbed the thighs .. didn't quite make enough of the mix so it's a little sparse on the seasoning.
Made plenty of chicken with salt and pepper .


My wife makes the pizza dough from scratch and has really got the recipe dialed in. I'll post pics later.
Best way to go . Sounds great .
 
I usually start the thighs around 200 to get some smoke on them then crank it up to 350-400 to crisp up skin until I ternal temp of 180-190

Ya just need a bigger gun or just lay real still out in your yard for a closer shot.
