Decided to make some smoked chicken fajita style enchiladas. Bought some boneless breasts from Sam's and seasoned them with some Aussom Aussies Black Label Competition Rub and put them on the smoker at 275* for a couple hrs with a pan full of julienned peppers and onions. Once the chicken was smoked, I bought it in to cool so I could pull/shred it. While it was cooling, I made the enchilada sauce while also reducing/browning the pepper/onion mix.

I prefer flour over corn so the enchiladas are flour burrito sized shells, with some of the smoked chicken (which I used a little extra rub in the mix), some of the smoked pepper/onion mix, and some mild cheddar cheese then rolled. I place a little enchilada sauce in the 9x13 casserole dish then place 6 enchiladas (usually what fits), then cover with enchilada sauce, a light sprinkle of mild cheddar, and then in a 375* oven for 25-30min.

While they're in the oven, I made some homemade "Mexican style" rice and some black beans to accompany the plate. Added some sour cream, some Hernandez guacamole salsa, my own smoked habanero/garlic hot sauce, some shredded lettuce and dinner is served!

Ended up making 12 enchiladas but surprisingly had a lot of chicken left over, I imagine some smoked buffalo chicken dip or some smoked chicken bacon ranch pizza in the near future...

We go back and forth between red and green sauce.
I thought enchiladas are flour tortillas and burrito are corn?

Nope, out here in little Mexico enchilada are made exclusively with corn tortilla, thank God…as I can't stand enchilada made with flour tortillas.

Yea, I think someone else chimed in also, every time I eat them in a restaurant they're corn, but I'm just not that big of a corn tortilla fan.

Thanks.. I'm a fan of details on the cook if it helps others (I even look back at what I did for future cooks especially if it worked well), I look on some other sites for ideas and they don't have much of the process to understand what works or doesn't.. Nice that a lot of the people here are good about the details.
