Hi everyone I am new to the world of smoking. I purchased a weber smokey mountain 22.5”. And have used it 3 or four times now. And I am having trouble getting the temperature below 255. I am using the minion method. I even close all the lower vents and still can’t get the temperature to drop. Is there anything I can do. Any tip would be greatly appreciated. Thank you

Try catching your target temp on the way up by closing vents about 30° before. So if you want 255°, make some vent adjustments when the pit temp is 225°.
