Temperature of Beef Summer Sausage

I treat my venison same as beef. I HAVE only done venison SS.. but I take to an IT of 155*.. the overheat will add a few as well...
 
Slowly take it up to 152 and then get them in some ice water. Or bring them up to around 145 and put them in hot water until 152 then ice bath. Keep your smoker and hot water temp under 175.
 
Ditto on the 152° internal temp..........

What if you have pork fat added to it?  Does it have to be 160 then or is 150-152 still okay?
