Hello from Saskatchewan Canada. I am quite new to smoking. I have a Dynaglo 36 inch dual door liquid propane vertical smoker. I have some trouble keeping the temperature stable and it often goes too high.

Any suggestions on how to sort this out?

I'm in the same boat. I'm finding cracking the door helps at times, especially for a dry out cycle. Just gotta play with vents and burner controls to get what you're after. It's all about experimentation. Luckily, there is no absolute to smoking, just guidelines.
