I started a smoke this morning of two 7# butts.  Set the mes to run at 215 which my maverick said was 225 at the time.  About an hour into the smoke temp started spiking to 250-260 so i turned down the mes to 205.  woke up this morning and maverick said 205.  Im wondering if the pork is still ok. i turned it back up to 225.  I probed it from the fridge at 32deg.  1 reached 140 at 4:15min the other at about 5hrs.  Any help will be great. 
 
you should be fine. You were close to the 4hr mark when you hit 140. The only thing is if you injected it, then you really want that 140 in 4hrs mark, but i would keep going. I know traditionally smoking is 225, but that is a low end of it. i usually will do my cooks at 250-275. I like to have the temp coushion and it pushes through the stall faster.
 
Thanks. I read they changed it to 41-135 in 4 hour and im pretty sure i hit that. So i know now to cook at a little higher and that my mes will level out over the whole smoke.
 
yes most State Health Codes are 41-135.....in my world I work in they have us do 40-140, so I am always in that mode..... make sure to share your q-view pics when done.....we all love to drool over others cooks.....
 
Just worries me when it slowed down. Making pulled pork for my nieces birthday dont want to get them sick.
