  1. Well today's smoke will be chicken thighs (wife requested) and here is a little teaser shot of them in the marinade

    Marinade is as follows

    1 1/2 Tbs. Olive Oil

    3 Tbs. Agave Syrup

3 Tbs. Honey (I used orange flower)

    3 Tbs. Tequila

1 Tbs. Orange Liquor (I used Grand Marnier)

1 1/2 Tbs. Hot Sauce (I used Franks)

    1 1 /2 Tbs. Melted butter

    3 Tbs. Lime juice

1/2 tsp. Cayenne (you can adjust to your heat liking)

    1 Tbs. Ancho Chili Powder

    1 1/2 tsp. Brown Sugar

    1 1/2 tsp. Garlic Powder

    1 1/2 tsp. Cumin

    1 1/2 tsp. Black Pepper

    3/4 tsp. salt

I will smoke these at 250F for about 2 hours. Now I need to come up wit my sides [IMG]   More to follow as the smoke progresses.

Waiting to see the outcome. The marinade sounds very strong...

  3. Very Mexican themed for sure.  The 2 hour smoke though will mellow the flavors.  Smells great right now in that marinade.
  4. AWAY WE GO!!!!

    Out of the marinade

    A little closeup

CLOSE that door!!  Ready for smoke.

Mix of Hickory and Cherry and a temp of 250F.  Figure 2 hours.

Looks good , Scott !!! [IMG]

Your marinade is interesting , I have been looing for Agave and no luck here in Toledo. Curious about it and how it is in a recipe.

    Have fun and . . .
  6. I will let you know how it all turned out.  As for Agave......do you have BevMo in Toledo? If so they have it.  Also Trader Joes.

I would imagine it will have similar properties to honey. A sweet flavor profile but just a bit different.

Looks good so far. It sounds tasty!

    Happy smoken.

Looking good! Can't wait to see final results! Sides?

My local grocery store has agave but it's not where I'd guess it was. Was by the molasses in the organic area.
  9. ***NOTE TO SELF***    Make sure you place the drip pan into to area provided by the fine people who designed your smoker.  Otherwise GREASE will drip out and flow into beautiful but so needed patterns on the patio.

All cleaned up. Thank goodness Mrs. PadronMan was sleeping [IMG]

On another note that chicken smells AWESOME!!!

Even if you do as manufacturer say they might leak juices if your cooking right! What style smoker you got?

  14. Smokin-It #2 here at the house.    And you are right.....I suspect that even with the Pan in tomorrow with 16 lbs. of butt cooking I may overflow [IMG]

do you use a Amps or additional smoke source? I'm glad I got a pellet
  16. No need for either of those things.  This generates smoke using chunks and uses very little wood (about 2oz for a typical smoke)  I use a little more for a long smoke like tomorrow's butt.

Nice my experience with electric smokers are with chips
  18. The MES line uses chips....The type like mine (Smokin-It, Smokin-Tex and Cookshack) all use nice chunks.  I love my electric cause I can set and forget.
  19. Well the chicken is done.....well and GONE.

Open the door and this is what I see......10 golden beauties lookin at me!

Resting as I steam the broccoli and make the cous cous

I LOVE a good close-up.  Love the color these got.

But was it good?  Did your wife like it?  Well.....lets see

Ahhhhhhhh yessssss it was well received.

Thanks for looking guys and gals.  Pork tomorrow.
