Made these today. Didn’t even think of layered pictures, sorry but realized you guys might like this idea with all the heat and did snap a couple pictures. These are light but flavorful.

These are store bought corn “tostada” shells but they are really smallish bowls of crispy corn. I layered pinto beans on the bottom, Mexican rice on top of that, then pulled smoked chicken, shredded cheese then Smothered that in 505 green Chile sauce from the jar , then topped that with shredded iceberg lettuce, diced onion and tomato and avocado slices. Lime juice over that then a dash of salt and fresh cracked pepper.

Love that 505 brand of sauces and etc. fell in love with while in NM.
and even with the avocado on it I’d be all over thst plate.

Nice Eric!! I'd eat that, but my wife would devour one of those so fast it'd make your head spin. Those are some of her favorite flavors so thanks for the idea...
 
Thanks for the reminder. A great summer meal. I like to build the taco salad, then use crumbled lime corn chips as the "crunchy". We're going to Sam's club today for a day out with the wife and we'll find a restaurant for lunch and hit some other stops. Sam's sells these bags of fajita chicken strips that make it real easy for chicken taco/fajita salads. I also fry up some onions and jalapenos and use these for actual fajitas. Easy button meals!
