Brisket Tacos, that is...

Ground up one brisket yesterday for the freezer (1# ground beef packages and some burgers).
Put the other brisket in the LSG smoker about 8:30pm last night.
Just course S&P on it.

Tacos seemed like a good thing to make with it.

7:00am pulled it, then wrapped and back in.

Done at noon, rested for 1/2 hour, removed from wrapping, and ready to take the knife to it.

Nice smoke ring on bottom. Top had a thin layer of fat. Nice and moist. Had a big pan of water in smoker.

Picture won't be on the cover of Bon Appétit magazine, but thry sure tasted good.

Wow! That looks awesome. I love tacos which are IMO always a good thing, and why not on a Friday?

I know that is delicious. Nice work. I’d kill those tacos. Home fried is the only way to go. Where is the avocado?
