My lady isn't as Rednexican as I am, so she may eat some of the barbacoa, but I know she'll eat these fillings.
I marinaded 4 chicken quarters in an achiote and OJ mix and then seasoned a chuck steak with some homemade taco seasoning. In the smoke for a few hours and then will be wrapped up in foil pans to cook down to shredded goodness!
