My BIL needs to defrost his freezer, so we got some chuckys, a few steaks and some bur g er patties dropped iff on Sunday. Monday was burgers and Tuesday was t bones. I'm pretty sure I could eat a minimum of one t bone every single day!

Old school butcher. It was friends of my wife's family. I believe the father and probably mother have passed and one of the sons took over. He is probably mid to late 50 now. Still cutting the way he learned from his parents 40 some years ago.
My inlaws aren't big steak people and when they do make them they are ruined/overcooked/burnt. So they get these cut about ⅓ as thick as I would. I imagine its tough to cut them so thin lol. You gotta be on your toes when grilling them to not go past med rare.

Looks great! And if cooked properly the other hand is trying to stop the juices running down your chin!
