Swineapple, Crispy Crowns Warm Potato Salad and Smoked Beans.
Ribs are on sale around here so it was time to play around with some ideas. Luckily, pineapples are also on sale, so it made sense to start with a "Swineapple". I saw this online a couple years ago and figured I needed to at least try it.
Started with a whole pineapple.
St Louis rack of ribs for less than $6.25
The Pineapple was skinned and the bottom cut for height and to sit level. The top leaves were also trimmed to fit in my Pit Boss KC Combo.
The ribs got a mustard binder and a healthy dose of Meat Church Holy Voodoo after a light trim and membrane was removed.
The ribs were then wrapped around the Pineapple and secured with wooden skewers.
Into the smoker set at 250F.
After 2 hours the whole thing was wrapped in tinfoil (afywr trimming the skewers flush) and went for another 2 hours. Then I started layering BBQ Sauce on the ribs.
