I finally had all the ingredients come together to undertake this adventure.
At 06:30 an 8 pound pork butt went in the smoke as the main ingredient. I knew I would be tight on time later, so I split it in half for faster cooking. It was perfect at 14:00, so I let it rest and prepared the 3 pineapples. Two of them were split in half, scored, sprinkled with brown sugar and moistened with orange juice.
The largest pineapple was to be the star! I cut off the top, cut away the skin and in a spiral pattern, removed the seed cores. I hollowed it out as thin as I dared then packed it full of the pulled pork that I had moistened with pineapple and orange juice for added flavor. I put the top back on with 3 long skewers, then wrapped it in bacon, then sprinkled it with rub.
The other 4 halves were in the pellet smoker, so I had one of my stick burners pre heated and ready to go .
About 2 1/2 hours later the bacon was crisp and ready for its starring role!
The 4 halves were scooped out, filled with pulled pork and taken to my neighbors across the street. He has been battling cancer and other health issues, so I thought I would cheer him up a bit.
The Swineapple was absolutely amazing and worth all the effort!

Oh man, my wife is wanting me to grill some fruit. I'll have to show here this. And thats a great way to watch out for your neighbor.

Nice job I've done this a few times but a little different than yours
How did yours differ? The next one I make I will do a bacon weave instead of just wrapping slices around it. Not anything else that I can think of that would have improved it
 
Thank you everyone! I'm not on much anymore as I usually cook just for myself anymore and don't go overboard with extra prep and presentation

On mine I skinned and cored the pineapple. Cut up a pork loin and marinated with BBQ rub.

Then stuffed the pineapple with the pork, onions and poblano peppers

Wrapped in bacon and secured tops with skewers. I attempted a bacon weave and #1 it takes an absurd amount of bacon for something this big. And second it was near impossible to attach it lol. Took my weave apart and wrapped so good luck if you try that

Missed the sliced shot. These were for a party and beer was flowing so we just dug in. But we sliced so it was a bacon wrapped ring of pineapple with pork onions and peppers in every slice. So not a whole lot different except for the stuffing

Looks great! I would be afraid to stuff a pineapple with uncooked pork

To me it's no different than making a pork and pineapple tower for tacos Al pastor. Or building a kabob with meat touching veggies. Or even putting a raw roast in a Crock-Pot with veggies. Thanks for the like though. You definitely nailed your swineapples and nice on you for helping a neighbor

No insult intended. my fat fingers on my phone posted before I had explained myself, then I couldn't find a way to edit the reply.
I was going to continue on and say I would be afraid the pineapple would overcook and possibly disintegrate before the pork inside reached a safe temperature. Looks like you had great results though.
I will definitely do one again, but I will make a bacon weave next time as wrapping strips around it allowed them to shift during the cooking even after pinning them with toothpicks. Might even pour in a shot of Crown Royal next time:-)

Didn't take it like that at all bud. But I gotcha now. You'd think the enzymes would liquify the pork but it didn't. Definitely tenderized but worked out great and meat stayed intact and juicy as heck. And yeah mine had about 50 toothpicks each lol. I just couldn't make the bacon weave work no matter what I tried. The drunk swineapple sounds delicious
