Well the boys went to their moms for Valentine's day so I decided I would enjoy a meal all to myself.. No salads or green veggies tonight...just protein....more protein....and some carbs to top it off!! I only took a plated shot. I put my phone down and just enjoyed cooking a meal for myself. Came out great!

That looks amazing. I have been trying to find an authentic Italian joint around here that does caccio del pepe and its impossible for me. I'm going to have to learn how to do it.

If you can boil water you got it!

Pecorino Romano freshly grated (about 1/2 cup)
Coarse ground pepper ( to taste)
Pasta (about 1/4 lb)
Pasta water
This is about one serving depending on what your having with it.

Toast pepper corns in a skillet then coarse grind if you want the full flavor...
Boil your pasta
Right before your pasta is ready add about a cup of the pasta water to a hot skillet... Put the pasta right in the pan (dont strain it)...turn off the heat and add the ground black pepper(I like a lot) and most of the cheese... Toss and stir until it gets creamy...add more pasta water as needed.. You don't want it too thick before plating... The pasta will soak some up and it will thicken as it rests.
Once plated top off with a little more of the cheese... All done! Easy peasy!

No problem!.. Keep in mind I have no ideas on the actual amounts.. But that should be a good starting point. Just make sure you have enough cheese grated and add pasta water as needed.. It's kind of a "by feel" thing
 
Looks good Travis! I love cacio e pepe and make it often since it only requires 3 ingredients that I usually have on hand. The wife isn’t a fan so it’s something I make by myself when I don’t feel like fussing with dinner.

It takes a bit to get the sauce right and adhere to the pasta properly and yours looks very nicely coated and creamy. Good job!

Thanks! Sometimes I would rather have this than mac n cheese...and yea it does take a little practice to get it right.. But once you get it right once its easy everytime! Good stuff for sure!!

We have scallops down here and during season you can go out and get your own they have put limits on how many per person. My wife doesn't like them and my parents are deceased, so I don't go out anymore but it used to be fun. You snorkel and spot them then dive down and pick them up and put them in a mesh bag and keep going they are usually in 3-8' of water where we went.

I was raised on the cheesy pasta, my Gramp's wouldn't eat dinner unless he had his cheeseor pesto pasta first coarse, and I'm not kidding.:emoji_joy::emoji_joy::emoji_joy:

Fresh out of the ocean, scallops are FREAK"IN AMAZING!!!!! They are so sweet that we rarely cook them, we eat them raw straight out of the shell or seared on a white hot piece of steel over the fire with a little lemon juice clarified butter, garlic, sea salt and white pepper. I can eat them until I get sick, along with fresh oysters, abalone, crab and clams. I swear, I can't help myself!!!

I could only imagine how good they would be fresh cought and straight out of the shell! And seared on a screaming hot plate right over the fire would be perfect. I thinknthats the key to good cooked scallops! Its got to be about as hot as you can get it for that good sear!!

That's the way to do it Travis!! Take advantage of those days and make the best of them bu doing whatever the heck you want and not having to tell the kids "you need your veggies". Kudos my friend!!
