With the help of S2K9K I made up a batch of Scarbelly wings for the big game, they were the hit of the party and have been told by the wifey are a must to make again! Thanks S2K9K!
Got about 10 lbs of wings injected the night before....
Seasoned up the batches the next day...
Got them in the smoker Sunday afternoon about 2:00, tried to keep them at 300 degrees which was a struggle as it was only about 25 degrees outside, used apple chips....
When its that cold out its not hard to spot the TBS.....
Pulled out at about 4:30 and done to perfection! Awesome wings!
