Sunday Spares

Hey guys, I haven't posted que in a while, so I thought I would give everyone something to drool over (hehehe...yeah right).

Smoking two racks of spares...using Ray's Rub (my own rub...)....this time I used a mustard/apple cider vinegar mix on the ribs first, then sprinkled the rub on...I didnt cake it on as much as I usually do...simply because I didnt have that much of my rub made...and didnt feel like making some fresh (Lazy Lazy Lazy!!!)

Using Apple and Pecan (first time for using pecan wood...) Temp between 225 and 250...its a nice day out, so it will be easier to control the heat.

I am also making some BBQ sauce from a recipe I got out of Steve Raichlen's BBQ Bible (just got this for my bday...has some awesome stuff in it).  The sauce is actually from the Pit Boss for the PowderPuff BBQ team out of Kansas City...so if you are on here...thank you thank you thank you!!!)...Its has Apple Cider Vinegar, Grey Poupon Mustard, and Honey as the base...with a dab of tomato paste and black pepper/kosher salt/garlic powder...It was a little salty coming off the stove, but now that it has cooled for an hour, it is not so salty! It really has a tang of its own! Cant wait to try some on the ribs!

OK, enough of my gabbing...on to the pics...

Here is the start:



Used the mustard/apple cider vinegar first...



Ribs dusted with my rub



And...Into the smoker we go..I took out a shelf...raised the water pan up one level and placed the probe for a more precise reading of the heat...



The Sauce is boiling...so its time to turn down the heat and let it simmer!



Clean up Crew already smell the smoke in the air...they are ready and willing!!!

I will post more pics of the finished product here in a bit...Perfect day for smoking!!!

It all looks great from here and that pit crew looks like they could eat a rack by themselves.

Now your ribs look good but I think that you might outta feed the clean-up crew their looking alittle hostile to me.

Hehe...yeah....the problem is they are ALWAYS hungry...so even if I Fed them, they would still be hungry!!!

Looking good but I am not sure you are getting any of it. I think the crew has already taken claim to it

Ahhhh the finished product...and, BONUS...they finished during halftime...Chiefs are up by 10 over the Raiders!!!

Here is the finished product...after applying a finishing sauce...



I didnt have any foil (I know...how could you run out of foil!!!!) so these were done straight in the smoker for 5 1/2 hours...the finishing sauce was applied with 30 minutes to go.



Got a nice pink smoke ring...



And the burnt ends that fell off as I cut them up were delicious...hehe...they cut up really nicely!

Well there ya go, I am heading up to eat them now...and have locked the Crew in the Basement...heheheeh

Great looking ribs BoneDaddy,

You may have ran out of foil but it looks like the ribs did perfect just the way you did it.

Lol about locking the crew in the basement, cause I bet they would make short work out of that plate full.

Hehehe...The Crew did get several bones...and I mixed some meat into their food.

They were happy!!!

Nice looking Ribs! Did you notice a difference by not using foil? Were they as tender as when you used foil? Just curious. I know I want to reach through my screen and grab one of those!

I did notice a different. They tasted great, but they were not the fall off the bone tenderness that you get when you foil. Not my best ribs, but the flavor and amount of bark was perfect. I just needed that foil to make them tender :-)

Dont get me wrong...they were not tough by any means...just didnt fall off the bone is all :-)
