Lots to do this weekend but the weather was nice enough that I had to get at least the gasser working.
I trimmed and split a pork loin into 2 fillets and brined in a little TQ and water.
The first one was coated in Sweet Baby Ray's and the second in Sriracha.

It was great off the gasser but would have been so much better on the Weber. Next time!
 
That’s an awesome move. I like the idea of more surface for smoke, while still keeping it medium rare in the middle.
 
They both look fantastic!
I've seen this done before, but have never done it myself!
