Anyone have a problem with defrosted summer sausage being mushy? Any way to avoid this? Getting ready to do a batch and don't want it mushy when I pull it from the freezer in a few months. Plan on vac sealing before freezing.

Also, if vac sealed is refrigeration or freezing required? Store bought stuff has a 18-24 month shelf life until opened, is that from all the nasty preservatives they add?

Lastly, does it need to mellow after smoking like cheese?
 
Would the right conditions be the freezer or the thawing process from the freezer? Trying to understand your comment a bit more. Thanks.
 
I have froze seasoned meat before stuffing and had no mushiness.
