I ground up and seasoned about 12 lbs of summer sausage and currently have it resting until tomorrow. My problem is I now have to go out of town tomorrow and wanted to see what my best option is,seems how I wont be stuffing and smoking tomorrow as planned.
 
GFSN, How long do you plan on waiting to stuff/smoke them? A few days in the fridge won't hurt.
 
You will be fine. Ive had the same situation arise where i couldnt smoke something I cured for a while. I froze, thawed at a later date and smoked and it was fine.
