So I haven't had much luck with the 3-2-1 method

so last night I kept track of my cook times and wanted to share them

Put ribs on bone side down

80 minutes later flipped them over

64 minutes later foiled with apple juice and placed back on bone side down (will do meat side down from now on)

62 minutes later took out of foil and back on grill with a light coating of BBQ sauce

33 minutes later took off grill

I had some trouble with keeping the temp up this time it stay at around 225-230

from the 3-2-1 I used a 2.3   -  1  -  .5


 
So what specifically is wrong? 

Looking at your Q, the outer ribs are pulled back nicely, not your middle ones.  With your posted times you shaved over 20% of the smoking time off of the 3-2-1 method (if I did the math right in my head). 

Have you tried sticking exactly to the times?

Are you sure your temps are correct with your thermometers?

With My MES at 230 I do a 3-1.5-0.5 and they come out almost fall of the bone tender.

Post some more inf o and I'm sure someone will chime in. You will have mouth watering ribs soon!
 
I tried the 3-2-1 a couple weeks ago and I did not have a very good result, so I guess the the 3-2-1 does not work for everyone, or I did something wrong that I have not figured out yet.
 
 
Those look pretty good. I do a modified 3-2-.5 (on the grill with barbeque sauce) in my MES40 at about 250*. I smoke meat side up until foiling and then it's meat side down.

We don't like "fall off the bone" but want them to have a bit of pull and yet come cleanly off the bone. This method works every time for the kind of ribs we like.
