I wanted to try a stuffed Pork Loin . Got some Peaches to fill it with.
They had a small Pork Loin at the store in town.
starting to make the cuts to open it up
first time cutting one open like this, not bad for first time . Next time will try to cut it
even thinner.

Put some brown sugar , pepper , garlic salt and paprika on it
got this smoker on clearance awhile back. So wanted to see how it works before doing
any mods. to it . Seasoned it this morning then put the loin and potatos on .
the temp from one side to the other was about 50 degrees different. Figure I can put
the potatos on the hot side and hope they get done when the loin is done.
The temp gauge in the lid was pretty close to the probe temp. that I had on the grate right
under it.
