Struggling could use some help with first cook

Could use some help guys struggling with my first cook got the Kohl’s going good and hot. I made the mistake of letting it get up to 500 and I can’t get it back down into range. The only way I can get it below 250 is to slide the charcoal out of the way With both dampers closed as soon as I put the charcoal back in it’s skyrocket to 350. Do I have too much fuel thanks for any help

In the future just use the minion method. Dump unlit coals with wood chunks mixed in in the charcoal basket... Take back out 6-12 unlit coals from the center of the pile and light those in your chimney (assuming you have one)... let them get about half way lit and then dump them back into the hole where they came from.. Now open all vents wide open and let temps come up... when it gets to about 200 then start choking down the intake vent to zero in on your preferred temp... It's much easier to bring heat up instead of trying to bring them down as your finding out...

Thank you so much for jumping in and helping out. I remove some Coles still sitting around 275 but much better. I made the mistake of having the idea in my head when I seasoned it to crank it wide open for two hours and I did that and got it up to 550 obviously big mistake. This is definitely a learning curve. I will look up the minion method. Yes, I do have a chimney so I guess I will have to watch an ad charcoal to get me through to the six hours? Thanks again.

Thanks to you. I have it under control holding steady right here following mad scientist recipe two hours at this temp the rest at 275 according to my probe thermometer, poking it through the lid touching the great temperatures within 20° of gauge I’m showing 253 Ish

had to look up the smoker. likely too many coals all lit up. Minion method works good, probably a learning curve on how many coals you need, unless someone had one and can chime in. Doesnt look all the different than a WSM. Overshooting temps at the start can happen, recovery from that can be slow. Closing the air intake will take a pit as mentioned.
