Hello to all. i am by no means a grill expert, smoke expert i just love to cook and really love to grill. I  have a 40 gallon hot water heater turned into a grill that i have yet to learn or get a good comfy feel for. I can successfully grill whatever just because i do not forget to keep an eye on it. I prefer low heat and just let it go it tends to come out nice and tender as well as juicy ribs and chicken. However i have been contemplating trying to do a competition in the next year and if you guys can give me any tips or things to look for or try doing it would be greatly appreciated.
 
Howdy fink, welcome to the forum.  A waterheater grill, what a great idea.  If you are able, put up some pics for us to admire.  My camera went on strike, and I need to get a new one, so I can't put up any pics now, gotta get a new one.  As far as suggestions, you are right about slow and low temp cooking and smoking.  I use lump charcoal for my smoker and wood chips for smoke flavor.  I find it cooks better than briquettes.  I hope these few ideas help a bit, other members here are really up on competition cooks and smokes, they should be jumping in soon with ideas.  In the meantime if you have other questions post here or pm me, I will bew more than willing to help any I can, I found a lot of help from other members when I first came here.  Members have a lot of wisdom to pass on.  Steve
