Hello everyone!

I wanted to smoke some meat Saturday and so i decided on some chicken wings, A whole spatchcock bird, some beef back ribs, and a pork tenderloin. I will start with the chicken and make a few entries for each meat!

First the wings:


put on the top rack for basting later


run a little hot to get the skin crisp


basted with homemade sauce (candy apple red)


there is the wings continue on for the rest!

Here is the whole chicken:

I spatchcocked the bird and skinned it (the ladies don't like skin) and put on chicken n'rib seasoning from Weber.

Next i did beef back ribs:

I didn't get big ones because I'm the only person in my house that likes beef ribs. I got them cheap thought i would make them when everyone else was having hamburgers i could have ribs!

I used Weber Chicago Steak Seasoning (my new favorite beef seasoning) and covered liberally


removed the membrane.


on the top rack next to the wings. i wanted them to get more heat.

finished cooling! they come out very tasty and a good smoke ring but that pic accidentally got deleted!


One more meat to go!

Finally i did a pork tenderloin. It wasn't a whole one but a portion i bought at the store.

Kept it simple with just kosher salt

Scored the fat cap


let it smoke!


All done i took the IT to 165... higher than i like it but again the ladies don't like pink pork


Over all had fun Saturday morning

smoking a full smoker!

I missed this one somehow Aaron. It surely looks like you had a great day at the smoker!

Everything looks great, but those beef ribs look GREAT. I'd eat them anyday.

Cooking the loin to a higher IT than normal because the ladies don't like pink meat was a very wise decision. When the ladies are happy, we're all happy.
