Hope I dont bore everyone with all of my posting of the short little cooks, but that is what I do 99% of the time.

Very rare I do a long smoke, but I an on Sunday.  ( of course I will post it  )

Anyway here we go.

Chuck steak seasoned with Jack Stacks all purpose and Tony C's.  Using lump and hickory.


Got the good smoke going.


After 1 hour they are ready for the sear.

All done.


This pic doesnt show it, but it was a nice pink inside.   PERFECT for me.

Looks great! I love a good steak and that looks like a great one! Quick question. Do you reverse sear because the meat absorbs smoke better at a lower internal temp. What's the advantage of reverse rather than in the beginning. I have never done it so I am clueless haha

Yup.  If you sear first you kind of put a crust on the meat and the smoke cant get to the inside of the meat.

Fam likes the RS so much, I have a hard time not doin that with all our steaks now... They can tell if it's RS or not for sure.... Can't beat a good RS steak ! Thumbs UpThumbs Up
