I’ll start off by saying I apologize for my last two posts, they were quite shotty, very spotty, and just plain grotesquely even read!
OK! Today, since I don’t really have anything planned for a job to do, since were all still sitting around the house, at least us older folks, I decided I would take on three slabs of St. Louis style pork ribs from Costco.
What makes this such a challenge for me, is the fact that I’m using a master built cabinet propane smoker, and the amazing Smoke tray, with competition blend pellets for my smoke.
I was able to pull the membrane off of all three slabs and I applied Oakridge secret weapon to both sides of the ribs and then cut the slabs in half so I could get them in this tiny little cabinet! I am more custom to a stick smoke on my Oklahoma Joe Highland Grill, so this little cabinet is a bit of a challenge for me.
