Good day all. I was able to make a batch of St. Louis cut spare ribs over the weekend. They turned out perfectly. I trimmed them and put some salt on them and left them in the fridge overnight. I used Jeff's original rub on the ribs. Smoked at 250 F with hickory chunks and some oak whiskey barrel chips. 2.5 hours in the smoke, 2 hours wrapped, 1 hour back in the smoke for saucing.

I used Kinders black cherry chipotle sauce and it was wonderful. Best ribs I have done in a few years. Everyone loved the flavor, heat, and doneness of these ribs. :emoji_yum: Thanks for reading. :emoji_blush:
