Thursday afternoon I got this spur of the moment idea to invite my father in law for a steak supper. This was so last minute that I had to thaw them out in the microwave.
I put them in the smoker at 325 degrees.

I set the thermometer for medium.

I took them off the smoker and seared each side in a hot skillet with a little butter for just a few seconds.

And dinner is served.

This was the most tender steak that I have cooked. Very nice.
 
Those look great, I cooked a couple of Tbones on the Kettle last night also.

My wife's not big on smokey steaks, but it is something I have always LOVED!

I have some rib eyes in the freezer.... I have an idea....
