Then let the drinking commence! Question how much wood should i use? I believe its mesquite being Texas has a butt load of it.

I use apple juice, worshestershire sauce. Brown sugar and lime juice . And god damnn . It is so good

I'm with Dave on this one too...Leave them be....the smoke will take care of the ribs.
